Oolong Tea from China
The plants used for this tea are usually tall, straight-trunked trees with leaves so high on the plant that ladders are needed to harvest them. The resulting brew is orange or amber-colored with more of an edge than most oolongs. Several infusions are possible, with each infusion more mellow than the one before.
Brewing tip: 1.5 tsp., 203o, 5-7 min.
