This is considered to be the best of Japanese teas. During budding, the entire plant is covered with a special kind of mat for about a month. Because the leaves are prevented from photosynthesizing, the plant draws its nutrition from the earth. The leaf is mostly harvested by hand. It is then steamed a little, dried, and rolled until a small, pointy tea is produced. The infusion is sweet with low tannin content. Slowly the emerald leaves release their flavor, and you taste a sweet perfume. A very special tea to be savored with someone you love.

Brewing tip: 2 tsp., 170^o, 1.5 min.
